Savory cake with feta cheese & raisins

When you say “cake”, people think sweet cakes. Vanilla cakes, chocolate cakes, layered ones or cupcakes. Ξ€his cake is a bit different. It’s a savory cake , or a cake that combines cheese with something sweet, raisins. In my opinion, this cake beats all the sweet cakes out there. It’s pretty obvious that I’m a savory girl, huh? I love baking sweet things but when it comes to taste, I love something savory.

SAVORY CAKE WITH FETA CHEESE & RAISINS
(makes a loaf cake)

 

I N G R E D I E N T S

250g. plain four
1 tablespoon baking powder
150g. feta cheese, cut into small pieces
150ml olive oil
100g. sultanas/raisins
4 eggs
150ml milk
50g. plain yogurt
1 teaspoon salt
a pinch of black pepper

 

METHOD

||The cake: Preheat the oven to 180 C and line a loaf tin with baking paper.
In a bowl, mix together flour, baking powder, feta cheese and raisins. In a seperate bowl, whisk the eggs until fluffy and pale in colour. Then gradually whisk in the oil, milk and yogurt. Season with salt and pepper. Fold the flour mixture into the whisked eggs. Try not to overmix as this will make the end result tough. Pour the batter into the prepared tin and bake for 30-40 minutes or until a metal knife inserted in the centre of the cake comes out clean.
