I love comfort food-and who doesnt you might think?
I also like quick and easy food since most of the times I am in a rush. So was quite glad when I found out that I can make these cupcakes in less than 30 minutes! They make the perfect side for your morning coffee and even better the perfect company for meetings. I tried them last week and all my colleagues were commenting on how rich the taste of coffee and orange flavour was, high time to share the recipe on the blog I thought, so here you are! Hope you enjoy them as much as they did 🙂

For this recipe you will need (serving 8 people):
60 g of self raising flour
60 g butter
60 g brown sugar
1 beaten egg
2 tbsp orange extract
30 g cocoa powder
1 tbsp espresso coffee
20 g grated chocolate
for the glazing:
3 tbsp butter // 4 tbsp icing sugar // 3 tbsp espresso powder

Preheat the oven at 180 °C and mix in a large bowl the sugar with the butter until smooth.

Add the beaten egg and the flour…

…and then add the cocoa powder, the orange extract and the grated chocolate. 
Whisk all together until the mixture is smooth.

Last but not the least, don’t forget to add the espresso for extra flavour!

Spoon in the mixture into silicone cupcake cases and bake for 20 minutes.

While the cupcakes are in the oven, prepare the glazing by mixing all the ingredients together.

Remove from the oven and allow to cool on a wire rack, before drizzling the glazing on top.

Wrap them into paper and get them in the office with you. Success!
