First time I did this pie was in New Year’s Eve. Steven and I were in a rush to drive down to Edinburgh and celebrate with friends when I came up with this recipe. It is the ultimate Greek food-spanakopita
in Greek for those that have spend at least a summer in Greece and took them ages to spell it-and is commonly made during the spring time.
Steven loved it and everytime I ask him what he would like me to cook, this is on the top of his list.
As I dislike feta cheese I made a slight alteration using Gouda cheese in slices but it is equally tasty not to say better than the original recipe!
