
One of the dishes that I love to cook is salmon and asparagus in orange sauce; so quick, so tasty but beyond everything so healthy! On weekdays and when I come back from the office it takes me less than 30′ to prepare and cook this dish and keeps me full for many hours. I do the orange sauce according to one of mum’s old recipes and it’s delicious! I can’t recommend this recipe enough, especially if you are busy and also into healthy eating..
Start by spicing up the salmon fillets with oregano, pepper and salt
Place them in a pan with a tiny bit of olive oil and let them fry both side until they get a nice golden brown colour and a bit of cripsy texture on top.
Next place the asparagus in a pan and sprinkle them with olive oil and salt. Let them roast for no more than 5′ and make sure to turn them over.
To make the orange sauce stir fry a chopped onion with olive oil, salt and pepper. After 3′ pour the glass of white wine and let it boil all together for another 3′. At the end add the orange juice and a little more salt and let until the sauce is united and has a thick texture.
To serve place the salmon fillets on top of the asparagus and add the sauce on top of the fillets. I love having rice and season salad as sides but fried potatoes work equally well!
