Food // Greek cheese pie

Greek pies are very popular lately in the UK. You can find a pie shop in many cities around the country, so I decided to share my favourite cheese pie recipe, made with filo pastry. 
For this recipe you will need:
1 packet filo pastry
1/2 kg feta cheese
1/2 kg grated edam
4 eggs
750 ml milk
80 gr butter
olive oil
In a bowl mix the feta cheese, the grated edam cheese, the butter and pepper. Add slowly the milk and mix all together until united.
In a medium tray apply a bit of olive oil and a filo. Repeat that 4 times and always apply olive oil between the filo layers.
Pour the cheese mix on the tray and then cover it with another 4 or 5 filo (depending how thick you want the pie). Apply olive oil in between the filo layers and on the top of the pie.
Cut the upper filo layers carefully in pieces as seen in the picture above and put in a pre-heated oven at 180 degrees of Celcius for 45′ until it gets a golden brown colour. 
Serve with a side salad.
