Oh, how I love spring time! Especially when the sun is very bright, the flowers have fully bloomed and you can sit outside at your favourite small cafe and enjoy your iced coffee. My favourite time is summer, however, I cannot deny the appealing side of this season. Making plans for summertime fun, experimenting with lighter ingredients and eating colourful fruit.
This is the best time to try something different, like an outside activity or a new bread maker, like I did. My boyfriend surprised me yesterday and got us a really amazing bread maker. I was always amazed and sceptic at the same time, how these machines make the bread. The whole experience of kneading and waiting for the bread to rise is like a cure for the soul, but when time is of essence, then we can always take advantage of what technology is providing us. So, when something like this landed on my kitchen, I had to give it a try. Ok, it was more of an experiment, but I really liked the result of this first bread. And I had to make a recipe, of course…
I had some leftover homemade hummus lying in the fridge (you can find the recipe here) and a very tasty feta cheese from Greece, which resulted in this match made in heaven. If you like comforting foods that remind you of your home and family times, or times being around with friends enjoying some good food, then this is a recipe you should try.
2 slices of bread of choise
1/2 cup of homemade or store-bought hummus
3 to 4 cherry tomatoes
1/2 cup Greek feta cheese crumbles
a handful of crushed walnuts
1.Toast your slices of bread in a toaster as wanted. Cut your cherry tomatoes in small slices.
2.Spead a generous amount of hummus on each slice.
3.Start adding your toppings. First, add the slices of cherry tomatoes. Continue by topping the feta crumbles and walnuts.
4.Splash some sea salt as wanted and some olive oil. If you feel adventurous, add some oregano on top.
5.Enjoy your tartines with company or by your self.
